In una ciotola, versare la farina integrale, aggiungere il burro tagliato a dadini, il sale e l'acqua. Impastare velocemente con le dita fino a formare una palla liscia e compatta. Avvolgere nella pellicola e riporre in frigorifero per 20 minuti.

Nel frattempo, sciacquare gli spinaci, metterli in una pentola con poca acqua salata e lessare per 5 minuti. Scolarli e strizzarli bene finché non rimane umidità. Tritarli finemente.

In una ciotola, unire la ricotta proteica, gli albumi, l'uovo intero, il Parmigiano, gli spinaci tritati, il pepe e la noce moscata. Mescolare bene fino a ottenere un composto omogeneo e cremoso.

Preriscaldare il forno a 200°C. Stendere l'impasto tra due fogli di carta forno, formando un disco di circa 26 cm. Trasferirlo in una tortiera da 24 cm rivestita di carta forno, rialzando i bordi.

Versare il ripieno nell'impasto e livellare la superficie.

Cuocere in forno per 35-40 minuti, fino a quando la torta risulta dorata e il ripieno leggermente assodato al centro.

Sfornare e lasciare intiepidire prima di servire.
