Preparare l'impasto: mescolare 30g farina di mandorle, 15g avena, 1g sale; aggiungere 8g burro freddo a dadini e 3ml aceto diluito in 15ml acqua fredda, amalgamare fino a texture sabbiosa e formare disco. Refrigerare 30 min.

Rosolare la cipolla (30g) in padella antiaderente con 3g olio EVO per 8 min, aggiungere aglio (1 spicchio), sedano (20g), mirepoix e il blend di spezie (pepe, timo, salvia, cannella, zenzero, noce moscata, given pepe di cayenna).

Aggiungere 60g carni miste magre (30g maiale, 30g manzo), cuocere 12 min mescolando fino a doratura, con 30ml brodo di cottura della patata (cavolfiore).

Schiacciare 60g patata lessata (o cavolfiore al vapore) e incorporare al ripieno; lasciar intiepidire.

Stendere impasto tra due fogli di carta forno, riempire, sigillare bordi con albume (metà uovo), bucherellare e spennellare con albume.

Cuocere in forno a 190°C per 12-14 min fino a doratura leggera.
