Preriscaldare il forno a 170°C e foderare una teglia rettangolare con carta forno.

Sciogliere il caffè istantaneo in 80 ml di acqua calda, mescolare e far raffreddare leggermente.

Tritare finemente le noci pecan con un coltello.

In una ciotola, montare il burro ammorbidito con lo zucchero di cocco fino a ottenere una crema chiara e spumosa (circa 3-4 minuti con le fruste elettriche).

Aggiungere le uova una per volta, mescolando bene dopo ogni aggiunta.

Incorporare delicatamente la farina integrale e il lievito alternando con 40 ml del caffè raffreddato, mescolando fino a ottenere un impasto omogeneo.
