Method

Lavare e tagliare le mele a dadini regolari, aggiungere il succo di limone e ½ cucchiaino di cannella, mescolare e lasciar riposare per 15 minuti a temperatura ambiente.

Preparare 6 stampini di silicone o ceramica (capacità ~120 ml), asciutti e puliti.

In una ciotola grande, versare le uova e sbattere leggermente con una frusta, aggiungere la ricotta e amalgamare fino a ottenere un composto liscio.

Aggiungere la scorza di limone grattugiata fine e il miele, mescolare bene.

In un'altra ciotola, setacciare insieme la farina integrale, le proteine in polvere, il lievito, il sale e i restanti ½ cucchiaio di cannella.

Versare gli ingredienti secchi nel composto di uova e ricotta, mescolare delicatamente con una spatola fino a incorporare completamente, senza smontare.

Aggiungere l'olio di cocco sciolto e mescolare ancora.

Dividere i dadini di mela (sgocciolati dal liquido residuo) nell'impasto, mescolando con cura.

Distribuire il composto equamente negli stampini, riempiendo fino a 2/3 dell'altezza.

Cuocere in forno preriscaldato a 180°C per 22-25 minuti, fino a che i tortini risulteranno leggermente dorati e un stuzzicadenti inserito al centro uscirà pulito o con poche briciole umide.

Estrarre dal forno e lasciar raffreddare per 5 minuti negli stampini, quindi sformare delicatamente e servire tiepidi o a temperatura ambiente.
