Inizia lavando e tagliando i broccoli in cimette. Fai cuocere i broccoli in acqua bollente per circa 5 minuti, finché non saranno teneri. Scolali e mettili da parte.

In una casseruola, scalda l'olio extravergine d'oliva a fuoco medio e aggiungi la cipolla tritata e l'aglio schiacciato. Cuoci per circa 3-4 minuti fino a che la cipolla non diventa trasparente.

Aggiungi la patata pelata e tagliata a cubetti nella casseruola e mescola bene per amalgamare.

Versa il brodo vegetale e porta a ebollizione. Riduci il fuoco e lascia cuocere a fuoco lento per circa 10 minuti, finché la patata non sarà tenera.

Trasferisci il contenuto della casseruola in un frullatore insieme al tofu morbido e al lievito alimentare. Frulla fino a ottenere una crema liscia.
