Method

Lavare e asciugare la melanzana, quindi tagliarla a cubetti di circa 1,5 cm e metterla in una ciotola con sale grosso per 10 minuti per eliminare l'umidità in eccesso. Sciacquare e asciugare bene.

Mondare il peperone, rimuovere i semi e tagliarlo in pezzi irregolari di circa 2-3 cm. Sbucciare la cipolla e tagliarla grossolanamente.

Versare l'olio in una pentola antiaderente a fuoco medio-alto e rosolare cipolla e melanzana per 3-4 minuti, mescolando frequentemente fino a dorarle leggermente.

Aggiungere il peperone, il curry e la curcuma, mescolare per 1 minuto per sprigionare gli aromi delle spezie.

Versare il brodo vegetale caldo, aggiustare di sale e pepe, portare a ebollizione e cuocere a fuoco medio per circa 20 minuti fino a che verdure siano completamente tenere.

Frullare la vellutata con un frullatore ad immersione fino a raggiungere una consistenza liscia e cremosa, circa 2-3 minuti. Se troppo densa, aggiungere un po' di brodo.

Incorporare delicatamente lo yogurt greco per aggiungere cremosità e proteine, mantenendo bassa la velocità del frullatore.

Trasferire in una ciotola, coprire con film trasparente e raffreddare in frigorifero per almeno 1,5 ore.

Versare in bicchierini o ciotoline fredde, decorare con un filo di olio extravergine, un pizzico di curry tostato, foglioline di basilico fresco e listarelle sottili di peperone rosso crudo.
