Scalda il latte in un pentolino fino a 50°C (puoi usare un termometro da cucina): deve essere tiepido al tatto, non caldo. Spegni il fuoco.

Aggiungi lo yogurt greco al latte tiepido e mescola delicatamente per 1-2 minuti, distribuendo i fermenti in modo uniforme.

Versare il caglio liquido goccia a goccia nel composto e mescola altri 30 secondi.

Trasferisci il tutto in una ciotola pulita e copri con un piatto o una coperta per mantenere il calore. Lascia fermentare a temperatura ambiente (idealmente 20-24°C) per 8-10 ore, o fino a quando il composto non addensa visibilmente.

Fodera uno scolapasta con una garza sterile pulita o con un canovaccio di cotone fine. Posizionalo sopra una ciotola capiente.
