Sciacqua il farro sotto acqua fredda, filtralo e cuocilo in una pentola con 500 ml di brodo a fuoco medio per 25-28 minuti: il cereale deve risultare al dente, cremoso al morso. Scola e tieni da parte.

Trita finemente cipolla, carote e sedano a mano o con un robot da cucina; dovrai ottenere un trito uniforme e non polverizzato.
