Ammollare le fave secche in acqua fredda per almeno 2 ore, poi scolarle e risciacquarle.

In una pentola a pressione aggiungere le fave pulite con il brodo vegetale e portare a pressione: 15 minuti dalla fischiata per cuocerle al dente.

In una pentola a fondo spesso, rosolare a fuoco medio la cipolla tritata finemente in 10 ml di olio extravergine per 3 minuti fino a che non diventi traslucida.

Unire le fave cotte (non scolare completamente il brodo) e portare a ebollizione, quindi aggiungere l'orzo integrale.

Cuocere l'orzo per 20 minuti a fuoco medio-basso, mescolando occasionalmente; il liquido deve ridursi gradualmente ma mantenere una consistenza cremosa.

Assaggiare e regolare il sale e il pepe nero.

Versare la zuppa in ciotole, completare con ricotta salata grattugiata, un filo di olio extravergine crudo e un pizzico di erba cipollina fresca. Servire calda.
