Method

Preparare il brodo: tritare finemente aglio e cipolla, rosolare in una pentola con 1 cucchiaio di olio per 2 minuti a fuoco moderato. Aggiungere i pomodori pelati, versare l'acqua, sale e pepe; portare a ebollizione e cuocere per 8 minuti.

Preparare la marinata: spremere il limone e mescolare con 1 cucchiaio di olio, sale e pepe in una ciotola.

Tagliare i filetti di pesce in bocconi di 4-5 cm, immergerli nella marinata e lasciare riposare per 10 minuti.

Aggiungere il pesce marinato al brodo caldo, ridurre il fuoco a medio-basso e cuocere per 12-15 minuti fino a che il pesce non si sfaldi facilmente con una forchetta.

Scaldare il cous cous integrale: portare a ebollizione 200 ml di brodo di pesce, versare il cous cous in una ciotola resistente al calore, coprire con il brodo caldo, aggiungere un pizzico di sale, coprire con un coperchio e lasciare riposare 5 minuti. Sgranare con una forchetta.

Distribuire il cous cous nelle ciotole, versare la zuppa di pesce sopra, guarnire con prezzemolo fresco tritato e peperoncino se desiderato. Servire immediatamente.
