Scaldare 5 ml di olio EVO in pentola piccola; rosolare la cipolla (40g) per 3-4 minuti fino a trasparenza.

Sciogliere 25g di burro di arachidi naturale in 120 ml di brodo vegetale caldo, versare nella pentola e mescolare bene.

Aggiungere 100 ml di brodo rimanente, 60g di pomodori pelati, un pizzico di peperoncino rosso e portare a ebollizione; ridurre il calore e far sobbollire 8 minuti.

Aggiungere 80g di cavolo finemente tritato, 50g di cavolfiore a pezzetti, 40g di carota, 30g di okra; proseguire la cottura per 10-12 minuti fino a tenerezza.

Incorporare 140g di petto di pollo cotto e tagliato a dadini piccoli; far sobbollire ultimi 2 minuti e insaporire con sale e spezie.
