Method

Reidratare i porcini in 250 ml di acqua tiepida per 10 minuti, poi scolarli conservando l'acqua di ammollo (filtrata). Tritare finemente i porcini reidratati.

Pelate le patate, tagliatele a cubetti piccoli e mettetele da parte.

In una casseruola media, scaldare l'olio a fuoco medio e aggiungere l'aglio tritato finemente. Rosolare per 2 minuti fino a doratura leggerissima.

Aggiungere i porcini tritati e rosolare per altri 2 minuti, mescolando spesso.

Versare il brodo vegetale e l'acqua di ammollo dei funghi (filtrata), portare a ebollizione.

Aggiungere i cubetti di patata, abbassare il fuoco e cuocere a simmer per 20 minuti fino a che le patate siano tenere.

Incorporare il latte scremato e cuocere per altri 3 minuti senza bollire, mescolando delicatamente.

Regolare di sale e pepe.

Tostare le fette di pane integrale in forno a 180°C per 5 minuti, strofinare leggermente con uno spicchio di aglio crudo e tagliarle a crostini.

Servire la zuppa in ciotole, decorare con parmigiano reggiano, crostini e prezzemolo fresco.
