Preriscaldare il forno a 190°C e foderare una teglia con carta forno.

Stendere la pasta sfoglia sul piano di lavoro e tagliarla in 12 strisce di circa 4 cm di larghezza.

Tritare finemente le olive nere denocciolate e trasferirle in una ciotola.

In una seconda ciotola, unire la ricotta magra, il parmigiano grattugiato, il succo di limone, l'olio extravergine e mescolare fino a ottenere una crema liscia e omogenea.

Incorporare le olive tritate alla crema di ricotta e aggiustare di sale e pepe.

Distribuire la farcitura al centro di ogni striscia di pasta sfoglia, quindi ripiegare la striscia su se stessa per chiuderla, sigillando bene i bordi.

Piegare ogni striscia ripiena a fisarmonica, iniziando da una piega minuscola in punta che rappresenterà il vertice dell'albero, e allargando progressivamente le pieghe verso la base.

Inserire uno stecchino al centro della base di ogni alberello per sostenerlo durante la cottura.

Disporre gli stecchini sulla teglia preparata e infornare per 18-20 minuti fino a doratura uniforme.

Estrarre dal forno e lasciar intiepidire per 5 minuti prima di servire.
