Method

In una ciotola grande, unisci la farina di mandorle, la farina di avena, il burro di cocco fuso, le proteine in polvere, le uova, l'eritritolo, l'estratto di mandorle e il sale. Mescola fino a ottenere un impasto omogeneo.

Avvolgi l'impasto nella pellicola trasparente e lascialo riposare in frigorifero per 15 minuti.

Preriscalda il forno a 180°C e rivesti una teglia con carta da forno.

Stendi l'impasto su una superficie leggermente infarinata fino a ottenere uno spessore di circa 5 mm.

Taglia l'impasto in strisce lunghe di circa 15 cm e distribuisci al centro di ogni striscia un po' di crema di mandorle.

Arrotola le strisce su se stesse, sigillando bene le estremità per evitare che la crema fuoriesca.

Adagia i rotoli sulla teglia, spennellali con un tuorlo d'uovo e spolvera con un po' di eritritolo.

Cuoci in forno per circa 20 minuti, fino a doratura.
