Method

Metti il petto di pollo in una pentola con acqua e portalo a ebollizione. Cuoci per circa 20-25 minuti finché il pollo è tenero. Scolalo e lascialo raffreddare, quindi sminuzzalo con una forchetta.

In una ciotola, mescola il pollo sminuzzato con i fagioli neri, l'aglio, la paprika, il cumino, il succo di lime, il sale e il pepe.

In una grande ciotola, amalgama la farina di mais con 200 ml di acqua calda fino ad ottenere un composto morbido e malleabile.

Immergi le foglie di mais in acqua calda per circa 30 minuti per ammorbidirle.

Prendi una foglia di mais, metti circa 2 cucchiai di impasto di farina di mais e aggiungi 1 cucchiaio del composto di pollo e fagioli al centro.

Arrotola la foglia partendo dal lato lungo, ripiegando le estremità per sigillare il tamale.

Posiziona i tamales in un cestello per la cottura a vapore e cuocili per circa 45 minuti sopra acqua in ebollizione, finché la masa è soda. Servili caldi!
