In una ciotola unisci acqua tiepida, lievito di birra e mescola delicatamente; lascia riposare 5 minuti.

Aggiungi farina integrale, semola di grano duro, olio extravergine, sale e semi di sesamo; impasta fino a ottenere un composto omogeneo e liscio (circa 8 minuti a mano, o 3-4 se usi un mixer).

Trasferisci l'impasto su un piano leggermente infarinato e compattalo in un panetto; copri con un canovaccio umido e lascia lievitare 45 minuti in un luogo tiepido.

Stacca piccoli pezzi di impasto (circa 12-15 g ciascuno), modellali a forma di pallina regolare e disponili su una placca foderata di carta forno; spolverizza leggermente con semola.

Preriscalda il forno a 190°C in modalità ventilata. Inforna le palline per 10-12 minuti fino a doratura leggera (colore biondo, non scuro). Estrai e lascia raffreddare completamente.

Nel frattempo prepara la crema: frulla il parmigiano grattugiato, i pomodori secchi ben scolati e le erbe secche per 15 secondi (o tritali finemente a mano); trasferisci in una ciotola.

Aggiungi ricotta magra, yogurt greco, curcuma, sale e pepe; mescola fino a ottenere una consistenza cremosa e omogenea.
