Preriscalda il forno a 180°C e prepara una teglia con carta da forno.

In una grande ciotola, unisci i semi di girasole, sesamo, lino e zucca, mescolando bene.

Aggiungi l'avena integrale, le proteine in polvere, la scorza di limone e il sale, amalgamando gli ingredienti secchi.

Versa il miele o lo sciroppo d'acero e l'olio di cocco fuso nella ciotola, aggiungi l'estratto di vaniglia e mescola con una spatola.

Impasta con le mani fino ad ottenere un composto omogeneo ma leggermente appiccicoso.

Forma 12 palline di circa 40 g ciascuna e disponile sulla teglia, distanziandole di 3 cm.

Appiattisci ogni pallina a uno spessore di circa 1 cm utilizzando il dorso di un cucchiaio.

Cuoci in forno per 10-12 minuti, fino a quando i bordi sono dorati e il centro è leggermente croccante.
