Method

Grattugia finemente la scorza di limone. In una ciotola, mescola farina di mandorle, farina integrale, proteine whey e sale fino.

In un'altra ciotola, ammorbidisci il burro e l'olio di cocco a temperatura ambiente, aggiungi la scorza di limone e mescola bene.

Incorpora l'uovo e il latte scremato al composto di burro e olio, mescolando fino a ottenere una cremina omogenea.

Versa il composto umido nelle farine secche, mescola delicatamente con una spatola fino a formare un impasto compatto. Avvolgi in pellicola trasparente e riposa in frigorifero per 60 minuti.

Preriscalda il forno a 180°C. Rivesti una placca con carta forno.

Su un piano di lavoro leggermente infarinato, stendi l'impasto a uno spessore di 4-5 mm con un matterello.

Ritaglia rettangoli di circa 7x4 cm con un coltello affilato o un tagliabiscotti, disponili sulla placca distanziati di 2 cm.

Cuoci in forno per 10-12 minuti fino a doratura leggera. Lascia raffreddare completamente su una gratella.

Sciogli il cioccolato fondente a bagnomaria o al microonde (30 secondi per volta, mescolando). Trasferisci in una piccola tasca da pasticceria con beccuccio fine.

Decora ogni biscotto tracciando una linea centrale verticale di cioccolato che lo divide a metà, poi aggiungi puntini sul cioccolato ancora caldo per riprodurre i motivi delle pedine del domino.
