Preriscalda il forno a 180°C e fodera una placca con carta forno.

In una ciotola mescola farina integrale, proteine in polvere, zucchero di canna, bicarbonato, sale e vaniglia.

In un'altra ciotola, sbatti l'uovo intero e aggiungi l'olio di cocco fuso e il latte scremato, mescolando fino a ottenere un composto omogeneo.

Versa gli ingredienti liquidi nel secco e impasta con una spatola fino a formare un panetto compatto; se troppo secco, aggiungi un cucchiaio di latte.

Trasferisci l'impasto su un piano di lavoro e stendilo con il matterello a uno spessore di circa 3 mm.

Con una formina rettangolare (6x4 cm) ricava 32 biscotti e disponili sulla placca.

Cuoci in forno a 180°C per 12 minuti, fino a quando i bordi risultano dorati; il biscotto deve restare leggermente morbido al tatto.

Togli dal forno e lascia raffreddare completamente su una griglia.

Prepara la farcitura montando la panna leggera fredda con le fruste elettriche fino a raggiungere consistenza di mousse (circa 2-3 minuti).

Spalma mezzo cucchiaio di crema di cacao su metà dei biscotti.

Su ognuno di questi stendi un velo sottile di panna montata (circa 0,5 cm).

Chiudi con un altro biscotto, formando un sandwich.

Cospargi i bordi della farcitura con farina di cocco disidratata, premendo leggermente.

Riponi i biscotti in freezer per 1 ora prima di servire.
