In un tegame, unisci le more, l'eritritolo, l'acqua, l'olio e la cannella. Cuoci a fuoco medio-basso mescolando occasionalmente finché le more si disfano e formano un sugo, ci vorranno circa 15-20 minuti.

In una ciotola, mescola la farina integrale con il sale. Aggiungi l'uovo e inizia a impastare, aggiungendo acqua poco alla volta fino a ottenere un impasto morbido che si stacca dalle mani. Non esagerare con l'acqua.

Dividi l'impasto in due parti e stendi una palla a uno spessore di circa un centimetro. Con un coltello infarinato, taglia strisce di circa 5 cm di larghezza. Ripeti con la seconda parte dell'impasto.

Prendi le strisce di impasto e, mantenendole sopra le more in cottura, pizzica dei pezzi di circa 8 cm e falli cadere nel sugo. Ripeti fino a esaurire l'impasto. Cuoci a fuoco medio per circa 10-15 minuti, evitando di mescolare fino a cottura ultimata per non rompere gli gnocchi.
