Preriscalda il forno a 180°C. Prepara una teglia rivestendola con carta forno o spruzzando leggermente d'olio.

In una ciotola capiente, versa il latte scremato e aggiungi il pangrattato integrale, lasciando riposare per 2-3 minuti affinché il pangrattato assorba il liquido.

Aggiungi la carne macinata magra nella ciotola con il pangrattato imbevuto, poi l'uovo intero, il Parmigiano Reggiano grattugiato, l'aglio tritato, il prezzemolo, il sale e il pepe nero.

Mescola delicatamente con le mani fino a ottenere un composto omogeneo senza sovra-lavorare (evita di stringere eccessivamente per mantenere la ricetta leggera e soffice).

Modella il composto in una forma rettangolare compatta sulla teglia, creando una base ben definita.

In una ciotola separata, tossa le zucchine affettate, le melanzane e i pomodori ciliegini con un cucchiaio di olio extravergine, sale, pepe, origano e paprika dolce.

Disponi le verdure grigliate intorno al polpettone sulla teglia.

Inforna a 180°C per 30-35 minuti, finché il polpettone raggiunge una temperatura interna di 75°C e le verdure risultano morbide e leggermente caramellate.
