In una pentola, porta a bollore il brodo di pollo con l'aglio e lo zafferano, quindi abbassa la fiamma e lascia in infusione.

In una padella antiaderente, scalda l'olio e aggiungi il pollo a cubetti, rosolandolo fino a doratura. Rimuovi il pollo e mettilo da parte.

Nella stessa padella, aggiungi la cipolla e cuoci fino a renderla traslucida, quindi unisci le carote, i fagiolini e i cuori di carciofo. Fai cuocere per 5 minuti.

Aggiungi i pomodori e cuoci fino a ottenere una consistenza cremosa, circa 10 minuti.

Distribuisci uniformemente la miscela di verdure sul fondo della padella e aggiungi gli spaghetti integrali spezzettati.

Versa il brodo caldo fino a coprire gli spaghetti e aggiungi il pollo rosolato sopra. Porta a leggera ebollizione.

Riduci la fiamma e lascia cuocere per circa 15 minuti, finché gli spaghetti non sono teneri e il brodo è assorbito.
