Method

Triturare finemente il prezzemolo e il basilico insieme, quindi trasferirli in una ciotola e tenere da parte.

Tritare aglio e peperoncino molto finemente e metterli da parte.

Scaldare l'olio extravergine di oliva in una pentola grande a fuoco medio, aggiungere aglio e peperoncino tritati, lasciar insaporire per 2 minuti senza far annerire.

Aggiungere il polpo tagliato a pezzi regolari, coprire parzialmente e cuocere a fuoco medio-basso per 8 minuti.

Versare i pomodori pelati e il vino bianco, salare leggermente, portare a ebollizione e cuocere scoperto per 5 minuti.

Aggiungere l'acqua e le vongole veraci, portare a leggero bollore, coprire parzialmente e cuocere per 8 minuti fino all'apertura delle vongole (scartare quelle che rimangono chiuse).

Aggiungere i filetti di branzino e di orata, posizionandoli sulla base del brodo, e cuocere a fuoco dolce per altri 5-6 minuti fino a quando il pesce si sfglida facilmente con la forchetta.

Versare la zuppa in una zuppiera calda, spolverare con prezzemolo e basilico tritati fresco, un giro di pepe nero macinato e un filo d'olio extravergine di oliva.
