Method

Preriscaldare il forno a 190°C. Foderare una placca da forno con carta forno e ungere leggermente con un cucchiaio di olio.

In una ciotola, tostare leggermente le noci in padella a fuoco medio per 2-3 minuti, poi tritarle grossolanamente.

In una terrina ampia, setacciare insieme la farina di castagne, la farina di semi di girasole, l'albume in polvere e il sale.

Aggiungere lo yogurt greco e l'acqua, mescolare energicamente fino a ottenere un impasto omogeneo e fluido (simile a una pastella).

Incorporare l'olio, il dolcificante eritritolo e mescolare bene per 1 minuto.

Versare il composto sulla placca preparata, stenderlo uniformemente con una spatola fino a coprire tutta la base (spessore circa 1 cm).

Cospargere la superficie con le noci tritate, i pinoli, l'uvetta e il rosmarino fresco.

Irrorare con un leggero filo di olio extravergine di oliva (circa 5 g rimanenti).

Cuocere in forno a 190°C per 25 minuti, fino a quando la superficie sarà leggermente dorata e l'interno morbido ma stabile.

Estrarre dal forno con cautela e lasciare raffreddare per 10 minuti sulla placca prima di trasferire su un piatto.

Tagliare in 8 porzioni e servire tiepido o a temperatura ambiente.
