In una ciotola mescola il cocco grattugiato, le mandorle tritate e il dolcificante fino a ottenere un composto omogeneo.

Pressa il composto sul fondo di uno stampo monoporzione (Ø 6 cm, altezza 3 cm) per formare la base.

In un'altra ciotola, unisci lo yogurt greco, la ricotta, il latte di mandorla, il dolcificante, la maizena, il tuorlo d'uovo e la scorza di limone. Mescola bene fino a ottenere un composto liscio.

Versa il composto sulla base di cocco e livellalo bene.

Cuoci in forno preriscaldato a 160°C per 20 minuti, fino a quando la superficie è leggermente dorata.

Lascia raffreddare a temperatura ambiente per 30 minuti, poi trasferisci in frigorifero per almeno 1 ora.
