Method

Tritura i 8 biscotti integrali finemente in un mixer. Aggiungi il burro chiarificato e mescola fino a ottenere un composto sabbioso omogeneo.

Fonda una tortiera da 18 cm con carta forno sui lati. Trasferisci il composto di biscotti, pressalo bene con un cucchiaio e livella la superficie. Riponi in frigorifero per 45 minuti.

Nel frattempo, grattugia finemente la scorza dell'arancia. Spremi il succo (dovresti ricavare circa 80ml).

Reidrata la gelatina in 30ml di acqua fredda per 5 minuti. Riscalda leggermente (a bagnomaria o a fuoco molto basso) finché non si scioglie completamente.

In una ciotola, unisci ricotta magra, yogurt greco, proteine in polvere, eritrolo e vaniglia. Mescola con una frusta finché il composto non diviene liscio e cremoso.

Aggiungi lentamente la gelatina tiepida al composto di ricotta, mescolando delicatamente. Incorpora il succo d'arancia e la metà della scorza grattugiata.

Estrai la base dal frigorifero e versa la crema sopra. Livella con una spatola bagnata. Riponi in frigorifero per 90 minuti.

Per la glassa: sciogli 2g di gelatina con 20ml di acqua tiepida. Unisci il succo rimasto di 1/2 arancia e un pizzico di eritrolo. Lasciar intiepidire leggermente.

Versa la glassa sulla superficie della cheesecake, distribuendola uniformemente. Decora con la scorza d'arancia rimasta. Riponi in frigorifero per 3 ore prima di servire.
