Tritura finemente i biscotti integrali insieme al cacao e 30 g di burro chiarificato fino a ottenere un composto sabbioso omogeneo.

Versa il composto in una tortiera da 24 cm con fondo estraibile, pressalo bene sul fondo e sui lati con il dorso di un cucchiaio, quindi riponi in congelatore per 15 minuti.

Togli dal freezer la base e lasciarla raggiungere temperatura ambiente (5-7 minuti).

Tritura 60 g di nocciole tostate e mettile da parte per la decorazione finale.

In una ciotola capiente, mescola energicamente la ricotta magra con lo yogurt greco e l'eritritolo fino a ottenere una crema liscia e omogenea, incorpora delicatamente le nocciole tritate rimanenti (20 g).

Versa la farcitura di ricotta sulla base di biscotto, livellarla con una spatola bagnata e riponi la tortiera in frigorifero per almeno 40 minuti.

Frattanto, fai sciogliere il cioccolato fondente 85% a bagnomaria insieme a 40 g di panna leggera e 10 g di burro, mescola fino a renderlo fluido e brillante.

Estrai la cheesecake dal frigorifero, versa la ganache di cioccolato sulla superficie e distribuiscila uniformemente.

Cospargi subito con le 60 g di nocciole tritate messe da parte, lascia solidificare in frigorifero per altri 30 minuti.

Taglia in 8 fette uguali e servi fredda.
