Method

Preriscaldare il forno a 160°C. Foderare una tortiera da 22 cm con carta forno.

Tritare finemente le noci sgusciate insieme alla farina d'avena, il burro chiarificato e 10 ml di miele. Trasferire nella tortiera e pressare bene il fondo con le mani umide, creando una base compatta e uniforme.

Pelare a vivo il limone con un coltellino affilato, separando la scorza (senza la parte bianca) dal succo. Conservare entrambi.

In una pentola piccola, unire i fichi secchi interi, l'acqua, 15 ml di miele, il succo di limone e 1 g di cannella. Portare a ebollizione, poi ridurre il fuoco e fare sobbollire per 8-10 minuti fino a quando i fichi diventano morbidi e il liquido si riduce leggermente. Trasferire in una ciotola e raffreddare per 15 minuti.

In una ciotola, sbattere insieme la ricotta magra, i 3 tuorli d'uovo, i restanti 5 ml di miele, l'estratto di vaniglia, la scorza di limone grattugiata e il sale fino a ottenere una crema omogenea e liscia.

In un'altra ciotola, montare gli albumi a neve ferma con una frusta elettrica (circa 4-5 minuti). Incorporare delicatamente la crema di ricotta agli albumi con movimenti dal basso verso l'alto usando una spatola, in due volte.

Versare metà dell'impasto nella tortiera sulla base di noci, distribuire i fichi caramellati (con parte del loro succo), quindi coprire con il restante impasto livellando bene la superficie.

Cuocere in forno per 35-40 minuti fino a quando la torta risulta ancora leggermente morbida al centro ma ferma ai bordi. La superficie non deve scurire troppo.

Spegnere il forno e lasciare la cheesecake all'interno con lo sportello socchiuso per 30 minuti per un raffreddamento graduale.

Estrarre, coprire con pellicola trasparente e riporre in frigorifero per almeno 3-4 ore prima di servire. Portare a temperatura ambiente 20 minuti prima della degustazione.

Affettare con un coltello leggermente inumidito e servire con una spolverata di cannella.
