In una ciotola, mescola l'olio d'oliva, la paprika, il sale, il pepe, l'aglio in polvere, lo zenzero e il pepe di Cayenna.

Prepara le cosce di pollo creando la forma a lollipop: spingi la carne verso l'alto e rimuovi la pelle, lasciando una porzione di osso esposta.

Spennella le cosce di pollo con il mix di spezie, assicurandoti di coprire bene ogni lato.

Prepara la griglia per una cottura indiretta e posiziona le cosce su un foglio di alluminio sopra una teglia per raccogliere i succhi.

Cuoci le cosce di pollo a fuoco medio per circa 30-40 minuti, o fino a quando raggiungono una temperatura interna di 75°C.
