1. Preriscalda il forno a 170°C e prepara uno stampo da chiffon cake di dimensioni piccole.\n2. Monta gli albumi con un pizzico di sale fino a ottenere picchi fermi, poi trasferiscili in una ciotola.\n3. In un'altra ciotola, unisci la farina integrale, l'eritritolo, il lievito e la scorza di limone.\n4. Aggiungi il tuorlo, lo yogurt greco e il succo di limone agli ingredienti secchi e mescola fino a ottenere un composto omogeneo.\n5. Incorpora delicatamente gli albumi montati nel composto, usando movimenti dal basso verso l'alto per non smontarli.\n6. Aggiungi le fragole tagliate a pezzetti e mescola delicatamente.\n7. Versa il composto nello stampo e cuoci per circa 25 minuti, fino a doratura. Controlla con uno stecchino e lascia raffreddare capovolto.
