Preriscaldare il forno a 180°C. Ungere leggermente uno stampo per ciambella (diametro 22 cm) con uno strato sottile di olio di cocco e coprire il fondo con carta forno.

In una ciotola, setacciare insieme la farina di farro, la farina d'avena, il matcha, il lievito e il sale.

In un'altra ciotola, montare l'uovo intero e gli albumi con una frusta manuale per circa 2 minuti fino a ottenere un composto leggero e spumoso.

Aggiungere lo yogurt greco, il latte scremato e l'eritritolo al composto d'uova e mescolare delicatamente con una spatola.

Aggiungere il burro chiarificato tiepido e la vaniglia, quindi incorporare il mix di polveri con movimenti dolci e circolari.

Versare il composto nello stampo e livellare la superficie con una spatola.

Cuocere in forno a 180°C per 35 minuti circa, fino a quando uno stuzzicadenti inserito al centro esce asciutto.

Estrarre la ciambella dal forno e far riposare nello stampo per 10 minuti, quindi sformare su una gratella e lasciar raffreddare completamente a temperatura ambiente (almeno 30 minuti).

Mescolare l'eritritolo con il matcha in polvere e spolverizzare la ciambella raffreddata prima di servire.
