Preriscaldare il forno a 180°C. Preparare uno stampo per ciambella (Ø 26 cm) ricoprendolo con carta da forno.

In una ciotola, setacciare insieme farina integrale, proteine in polvere, farina di cereali, lievito e sale.

In un'altra ciotola, sbattere il burro chiarificato con lo zucchero di cocco fino a ottenere un composto cremoso e chiaro (circa 2 minuti).

Aggiungere le uova intere una alla volta, continuando a sbattere, poi l'albume; incorporare l'estratto di vaniglia e, se gradita, la grappa.

Unire delicatamente gli ingredienti secchi al composto bagnato, mescolando fino a ottenere un impasto omogeneo e senza grumi.

Versare l'impasto nello stampo preparato, livellando la superficie con una spatola.

Con una forchetta, praticare leggeri solchi sulla superficie per favorire l'evaporazione e una cottura uniforme.

Spennellare il latte scremato sulla parte superiore.

Cuocere in forno a 180°C per 32-35 minuti, fino a quando uno stecchino inserito al centro esce asciutto.
