Method

Preriscaldare il forno a 180°C. Preparare uno stampo per ciambella da 26 cm ungendolo leggermente e foderando il fondo con carta forno.

In una ciotola capiente, triturare finemente le nocciole tostate insieme ai chiodi di garofano e ai chicchi di caffè con un mixer.

Aggiungere lo zucchero di canna e mescolare bene fino a ottenere una miscela omogenea.

In un'altra ciotola, sbattere le 3 uova intere fino a renderle cremose, quindi unirle al composto di nocciole mescolando delicatamente.

In una ciotola piccola, setacciare la farina integrale, la proteine in polvere, il cacao amaro, la cannella, il lievito e il sale.

Incorporare gli ingredienti secchi al composto umido alternando con l'olio di girasole, mescolando fino a ottenere un impasto omogeneo e liscio (evitare di sovramescolare).

Versare il composto nello stampo preparato e livellare la superficie con una spatola.

Infornare a 180°C per 30-32 minuti fino a quando uno stecchino infilato al centro esce asciutto e pulito.

Togliere dal forno e lasciar riposare per 5 minuti nello stampo, poi capovolgere su una griglia per raffreddare completamente.

Una volta fredda, spolverare leggermente con zucchero di canna e servire.
