Preriscaldare il forno a 175°C. Rivestire uno stampo ad anello (Ø 22 cm) con carta forno, in modo da facilitare la sformatura.

In una ciotola grande, unire lo yogurt greco con il miele: mescolare fino a ottenere una base cremosa e omogenea.

Aggiungere le due uova intere e l'estratto di vaniglia, sbattendo energicamente con una frusta per almeno 2-3 minuti fino a ottenere un composto chiaro e voluminoso.

In una seconda ciotola, setacciare insieme la farina d'avena, la farina di mandorle, il lievito e il sale.

Versare gli ingredienti secchi nel composto liquido in due riprese, incorporando delicatamente con una spatola per non smontare la consistenza.

Aggiungere l'olio di cocco sciolto e mescolare fino a ottenere un impasto omogeneo e fluido.

Trasferire il composto nello stampo preparato, livellando la superficie.

Infornare a 175°C per 28 minuti, finché una stuzzicadenti inserito al centro esce pulito.

Far riposare il ciambellone nello stampo per 5 minuti, poi sformarlo con cura su una griglia di raffreddamento.

Lasciare raffreddare completamente prima di servire (almeno 15 minuti).
