Preriscalda il forno a 180°C e rivesti uno stampo rotondo da 24 cm con carta forno.

Togli le mandorle intere e 40 g di eritritolo in un mixer finché non raggiungono una consistenza sabbiosa; trasferisci in una ciotola.

Grattugia la scorza di limone e mescola con i restanti 40 g di eritritolo in un'altra ciotola.

Sbatti le 3 uova intere insieme al composto di scorza e zucchero per 4-5 minuti fino a ottenere una mousse chiara e voluminosa.

Incorpora delicatamente le mandorle polverizzate, la farina di mandorla, la farina integrale e il burro chiarificato mescolando dal basso verso l'alto.

Aggiungi il rum e l'anisetta, quindi il lievito e la vaniglia; mescola fino a ottenere un impasto omogeneo.

Versa il composto nello stampo e cuoci a 180°C per 30-32 minuti, finché uno stecchino esce pulito.
