Togli la pelle alle nocciole strofinandole tra le mani, poi tritale finemente in un mortaio o con un coltello. Metti da parte 20 g di pezzetti.

Spezza i wafer in pezzi piccoli e frulla insieme alle 80 g di nocciole fino a ottenere una miscela sabbioso-cremosa.

Aggiungi la polvere proteica al cacao e il burro di arachidi, mescola bene fino a formare un impasto omogeneo e aderente.
