In una ciotola mescola farina integrale, proteine in polvere, semi di girasole tritati, semi di lino, rosmarino fresco e sale marino.

In un'altra ciotola, diluisci il lievito istantaneo in 70 ml di acqua tiepida e aggiungi l'olio extravergine di oliva.

Versa il composto liquido sulla miscela secca e mescola energicamente fino a formare un impasto omogeneo e compatto. Se risulta appiccicaticcio, aggiungi un cucchiaio di farina integrale.

Avvolgi l'impasto con carta forno e lascia riposare 45 minuti a temperatura ambiente.

Preriscalda il forno a 180°C. Stendi l'impasto tra due fogli di carta forno creando uno strato di circa 2 mm di spessore, lavorando delicatamente per non sgonfiare.

Ritaglia rettangoli di circa 5×8 cm con un coltello affilato, picchiettando ogni pezzo con i rebbi di una forchetta.

Trasferisci i crackers su una teglia rivestita di carta forno, spacing di 1 cm tra loro. Spolverizza leggermente con paprika dolce e sale marino.

Cuoci a 180°C per 6 minuti, poi abbassa a 150°C in modalità ventilata per altri 6 minuti fino a doratura uniforme.

Lascia raffreddare completamente sulla teglia (circa 10 minuti) prima di servire o conservare in barattolo ermetico.
