In un pentolino, scalda a fuoco medio il latte di cocco light con il cioccolato fondente tritato e l'eritritolo, mescolando fino a completa fusione.

In una ciotola, sbatti leggermente il tuorlo d'uovo.

Versa un cucchiaio della miscela di cioccolato nel tuorlo e mescola bene per temperare.

Riporta il tuorlo temperato nel pentolino e continua a mescolare a fuoco dolce per 2-3 minuti fino a ottenere un leggero ispessimento, facendo attenzione a non far bollire.
