In una ciotola, unisci la farina di avena, le proteine in polvere, l'eritritolo, il lievito e un pizzico di sale. Mescola bene.

Aggiungi lo yogurt greco, l'uovo e l'estratto di vaniglia, quindi amalgama fino a ottenere un impasto omogeneo.

Stendi l'impasto tra due fogli di carta forno, fino a uno spessore di circa 5 mm. Ritaglia un cerchio di 8 cm di diametro e pratica un foro centrale di 2 cm.

Posiziona il cronut su una teglia rivestita di carta forno e inforna a 180°C per 12-15 minuti, finché non è dorato.

Nel frattempo, prepara la glassa mescolando l'albume, l'eritritolo e il succo di limone fino a ottenere un composto omogeneo.

Glassa il cronut ancora tiepido e lascia asciugare per 2 minuti.
