Method

Preparare la pasta frolla: in una ciotola mescolare la farina integrale, la farina di mandorle e il sale. In un'altra ciotola cremare il burro chiarificato con lo zucchero di cocco, poi aggiungere l'uovo e mescolare bene. Unire i secchi ai bagnati e impastare fino a ottenere un composto omogeneo. Avvolgere nella pellicola e riposare in frigorifero 30 minuti.

Preriscaldare il forno a 180°C. Stendere la pasta tra due fogli di carta forno con un matterello fino a uno spessore di 3mm. Trasferire nello stampo da crostata (24 cm), rialzare i bordi e bucare il fondo con una forchetta.

Cuocere la base per 20-22 minuti a 180°C fino a doratura leggera. Estrarre e far raffreddare nello stampo.

Preparare la crema proteica: scavare i semi dalla bacca di vaniglia. In una ciotola montare lo yogurt greco con le proteine in polvere fino a texture spumosa. Aggiungere la pasta di pistacchio, i tuorli, il miele e i semi di vaniglia, mescolare delicatamente.

Sciogliere a bagnomaria l'amido di tapioca con 30ml di acqua, raffreddare leggermente e incorporare alla crema con movimenti dal basso verso l'alto.

Distribuire la crema sulla base di crostata raffreddata. Refrigerare almeno 90 minuti.

Prima di servire, decorare con pistacchio tritato, scaglie di pistacchio e lamponi freschi.
