Preriscaldare il forno a 180°C. Rivestire uno stampo per crostata da 26 cm con carta forno.

In una ciotola, mescolare farina integrale, farina di mandorle, lievito e un pizzico di sale.

Aggiungere l'olio di cocco ammorbidito, l'uovo intero e l'albume, impastare fino a ottenere un composto omogeneo e coeso.

Avvolgere l'impasto nella pellicola trasparente e riposare in frigorifero per 15 minuti.

Stendere la pasta con un matterello tra due fogli di carta forno e trasferirla nello stampo, rialzando i bordi.

Bucare il fondo con i rebbi di una forchetta, coprire con carta forno e cospargere con legumi secchi (per evitare gonfiori).

Cuocere a 180°C per 20-22 minuti. Sfornare e lasciare raffreddare.

Nel frattempo, preparare la crema: grattugiare finemente la scorza di 3 limoni.

In un mixer, frullare ricotta magra, yogurt greco, scorza di limone, miele e estratto di vaniglia fino a ottenere una crema liscia.

Aggiungere le proteine in polvere e il succo filtrato di 2 limoni, mescolare delicatamente fino a incorporare bene.

Distribuire la crema sulla base di frolla raffreddata, livellando bene con una spatola.

In una padella antiaderente, sciogliere zucchero e acqua a fuoco medio, aggiungere le fette di limone affettate sottilmente e fare insaporire per 2 minuti, girandole spesso.

Disporre le fette di limone caramellate sulla crema e decorare con foglie di menta fresca.

Conservare in frigorifero per almeno 2 ore prima di servire.
