Monda le fragole e tagliane 300 g a fettine sottili; tieni 100 g intere per la decorazione finale.

In una terrina, mescola farina integrale, sale e zucchero di canna. Aggiungi il burro freddo a dadini e sfrega con le dita fino a ottenere un composto sabbioso.

Crea una fontana al centro, versa l'uovo intero e l'estratto di vaniglia. Mescola delicatamente fino a formare un panetto compatto (non lavorare troppo).

Avvolgi l'impasto in pellicola trasparente e riposalo in frigorifero per almeno 30 minuti.

Preriscalda il forno a 175°C. Stendi la pasta frolla tra due fogli di carta forno e adagiala in uno stampo per crostata da 24 cm. Bucherella il fondo con una forchetta.

Cuoci la frolla vuota per 20 minuti a 175°C fino a doratura leggera. Estrai e lascia raffreddare 5 minuti.

Nel frattempo, in una ciotola monda, monta la ricotta scremata con il miele usando una frusta: deve diventare leggera e cremosa (circa 2-3 minuti).

Aggiungi il succo di limone fresco alla crema di ricotta e mescola dolcemente. Distribuisci il 70% delle fettine di fragole nella crema e incorporale delicatamente.

Versa il ripieno sulla frolla tiepida, distribuiscilo in maniera uniforme con una spatola da pasticceria.

Disponi le fragole intere e le rimanenti fettine sulla superficie a raggiera.

Cospargi i semi di chia per aggiungere croccantezza e omega-3.

Riponi in frigorifero per almeno 45 minuti prima di servire.
