Method

In una ciotola, mescola la farina di castagne e la farina di avena con lo yogurt greco e un pizzico di sale fino a ottenere un composto omogeneo.

Aggiungi l'eritritolo e l'uovo, amalgamando bene fino a formare un impasto compatto. Forma una palla e avvolgila nella pellicola trasparente, lasciandola riposare in frigorifero per 20 minuti.

In un pentolino, unisci le castagne cotte e il latte di mandorla; cuoci a fuoco medio per 5 minuti.

Frulla il composto di castagne fino a ottenere una crema liscia, quindi aggiungi l'eritritolo e l'estratto di vaniglia. Mescola bene e lascia raffreddare.

Stendi la frolla tra due fogli di carta da forno e adagia il disco in una tortiera di 18 cm di diametro, bucherellando il fondo con una forchetta.
