Method

Prepara la base: mescola 30g mandorle macinate con 15g farina di avena, 1 uovo, 5g eritritolo, un pizzico di sale. Stendi il composto in una piccola tortiera (15cm) e cuoci a 180°C per 10 minuti.

Nel frattempo, cuoci in un pentolino 80g bacche di saskatoon (o mirtilli) con 30ml acqua a fuoco medio per 5 minuti.

Prepara lo spessore: dissolvi 2g amido di tapioca e 1g farina di mandorle in 15ml acqua fredda, aggiungi alle bacche, mezzo cucchiaino di succo di limone e continua a fuoco basso 2 minuti fino ad addensare.

Versa il ripieno sulla base e distribuisci 20g yogurt greco 0% in piccole gocce sulla superficie.

Cuoci a 180°C per 8-10 minuti fino a doratura leggerissima.

Raffredda completamente prima di servire.
