Method

Affettare la melanzana a rondelle di circa 5 mm di spessore, cospargere di sale e lasciar riposare per 10 minuti per eliminare l'acqua in eccesso.

Asciugare le fette di melanzana con carta assorbente e disporle su una teglia. Spolverare con peperoncino e rosmarino, quindi infornare a 180°C per circa 15 minuti fino a doratura.

Nel frattempo, in una padella antiaderente scaldare l'olio e rosolare l'aglio a fuoco basso. Aggiungere il pomodoro tagliato a cubetti e cuocere per 5 minuti.

Frullare il pomodoro cotto con la ricotta fino a ottenere una crema liscia.

Distribuire la crema di ricotta sulle fette di melanzana cotte e guarnire con semi di chia e pepe nero. Servire caldo o tiepido.
