Tritare finemente le mandorle pelate in un mixer fino a ottenere una consistenza granulosa, senza farle diventare burro: circa 2-3 minuti.

Spezzettare il cioccolato fondente 85% in piccoli pezzi e metterlo in una ciotola a bagnomaria con il caffè espresso freddo: mescolare dolcemente fino a scioglimento completo, circa 4-5 minuti.

Aggiungere il liquore Alchermes (analcolico), l'estratto di vaniglia e il miele al cioccolato fuso; amalgamare bene.

Incorporare le mandorle tritate al composto di cioccolato con movimenti delicati dal basso verso l'alto, fino a ottenere una crema omogenea.

Coprire con pellicola trasparente e lasciare riposare in frigorifero per 90 minuti, affinché la crema si rassodi leggermente.
