Sciacquare i gamberi sotto acqua fredda corrente, staccare la testa dalla coda e rimuovere il carapace e le zampe con le mani. Incidere delicatamente il dorso di ogni gambero e estrarre l'intestino scuro con la punta di un coltellino, quindi risciacquare.

Tagliare il merluzzo e il branzino in pezzi da 2-3 cm, eliminando la pelle e le spine.

In un robot da cucina o frullatore, inserire i gamberi puliti, il merluzzo e il branzino a pezzi; triturare fino a ottenere un composto omogeneo e leggermente cremoso.

Trasferire il composto in una pentola, aggiungere il sale marino, il vino bianco, il prezzemolo tritato e il pepe nero; mescolare bene.

Portare a cottura a fuoco medio-basso per circa 15-20 minuti, mescolando spesso, finché il liquido non si riduce e il composto diventa più denso e concentrato.

Togliere dal fuoco e lasciar raffreddare per 10 minuti.

Distribuire il dado ancora tiepido negli stampi per ghiaccio (o piccoli contenitori), premendo leggermente con il dorso di un cucchiaio per compattare.

Lasciar raffreddare completamente a temperatura ambiente, poi trasferire in frigorifero per almeno 2 ore (oppure congelare fino a 3 mesi).
