Method

Preriscalda il forno a 175°C e prepara una tortiera di 12 cm di diametro, ungendo con un po' di spray antiaderente.

In una ciotola, monta l'uovo intero e l'albume con l'eritritolo e l'estratto di vaniglia fino ad ottenere un composto spumoso.

Aggiungi delicatamente la farina di mandorle e le proteine in polvere, mescolando fino a ottenere un impasto omogeneo.

Versa il composto nella tortiera e cuoci in forno per circa 25 minuti, o fino a quando non risulta dorato e cotto (controlla con uno stecchino).

Per la crema, in un pentolino, mescola lo yogurt greco, l'amido di mais e il latte di mandorla, cuocendo a fuoco basso e mescolando continuamente fino a ottenere una consistenza cremosa.

Una volta cotto il pan di Spagna, farciscilo con la crema e stratifica con i lamponi freschi, decorando con un po' di yogurt greco e altri lamponi sopra per guarnire.
