Scalda lo yogurt greco e il latte di mandorla in un pentolino a fuoco basso, mescolando fino a ottenere un composto omogeneo.

Ammolla la gelatina in acqua fredda per circa 5 minuti, quindi strizzala e aggiungila al composto di yogurt, mescolando bene fino a scioglierla.

In un'altra ciotola, unisci la ricotta light con l'eritritolo e mescola fino a rendere il composto cremoso.

Versa il composto di yogurt nella ciotola con la ricotta e amalgama delicatamente fino ad ottenere una mousse liscia.

Trasferisci la mousse in un contenitore monoporzione e riponi in frigorifero per almeno 1 ora.
