Cuocere le patate dolci tagliate a dadini in acqua salata per circa 15 minuti fino a quando risulteranno molto tenere, quindi scolarle bene.

Preriscaldare il forno a 170°C e preparare due stampi per donuts ungendoli leggermente con olio di cocco.

In una ciotola, frullare insieme le patate cotte, il latte di mandorla, l'uovo e l'olio di cocco fino a ottenere un composto omogeneo e cremoso.

In un'altra ciotola, mescolare insieme la farina di farro, le proteine in polvere, il lievito, la cannella, lo zenzero, la noce moscata e il sale.

Incorporare delicatamente gli ingredienti secchi al composto umido, mescolando fino a ottenere un impasto liscio e senza grumi.

Trasferire l'impasto negli stampi per donuts, riempiendo ogni cavità fino a tre quarti.
